Easy Chocolate Chip Mandel Bread Recipe

Makes: about 24 pieces. Prep Time: 15 minutes.
Bake Time: 45 minutes total
Ingredients:
2 cups all-purpose flour
1 tsp baking powder
¼ tsp salt
¾ cup sugar
½ cup vegetable oil
2 large eggs
1 tsp vanilla extract
1 cup mini or regular chocolate chips
Optional: ½ tsp cinnamon for dough or cinnamon-sugar for sprinkling
Instructions:
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, and salt.
Mix wet ingredients: In a large bowl, whisk together the sugar, oil, eggs, and vanilla extract until smooth.
Combine: Gradually add the dry ingredients to the wet mixture. Stir until a dough forms. Fold in the chocolate chips.
Shape dough: Divide the dough in half. With lightly floured hands, shape each half into a log about 10–12 inches long and 2–3 inches wide. Place both logs on the prepared baking sheet with space between them.
First bake: Bake for 25–28 minutes, or until lightly golden and set. Remove from oven and let cool for 10 minutes.
Slice and bake again: Lower oven to 325°F (160°C). Slice logs diagonally into ½–¾ inch thick pieces. Lay slices cut-side down on the baking sheet.
Second bake: Return to oven and bake for another 10–12 minutes. Flip slices and bake 5–10 minutes more until crisp to your liking.
Cool completely before storing in an airtight container.
