Easy Chocolate Chip Mandel Bread Recipe



Makes: about 24 pieces. Prep Time: 15 minutes.

Bake Time: 45 minutes total


Ingredients:

  • 2 cups all-purpose flour

  • 1 tsp baking powder

  • ¼ tsp salt

  • ¾ cup sugar

  • ½ cup vegetable oil

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1 cup mini or regular chocolate chips

  • Optional: ½ tsp cinnamon for dough or cinnamon-sugar for sprinkling



Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, and salt.

  3. Mix wet ingredients: In a large bowl, whisk together the sugar, oil, eggs, and vanilla extract until smooth.

  4. Combine: Gradually add the dry ingredients to the wet mixture. Stir until a dough forms. Fold in the chocolate chips.

  5. Shape dough: Divide the dough in half. With lightly floured hands, shape each half into a log about 10–12 inches long and 2–3 inches wide. Place both logs on the prepared baking sheet with space between them.

  6. First bake: Bake for 25–28 minutes, or until lightly golden and set. Remove from oven and let cool for 10 minutes.

  7. Slice and bake again: Lower oven to 325°F (160°C). Slice logs diagonally into ½–¾ inch thick pieces. Lay slices cut-side down on the baking sheet.

  8. Second bake: Return to oven and bake for another 10–12 minutes. Flip slices and bake 5–10 minutes more until crisp to your liking.

  9. Cool completely before storing in an airtight container.

  10. Enjoy!
